Matcha or Macha (抹茶)
Matcha or Macha (抹茶) is a specially grown powdered and a processed green tea
leaves.
Japanese tea Ceremony
Known for its particularly strong
flavour, it holds a special place in traditional Japanese tea culture as the leading
role in the Japanese tea ceremony and embodies a meditative spirituality. The Japanese
tea ceremony or Way of Tea is a Japanese cultural activity involving
the ceremonial preparation and presentation of matcha or powdered green tea.
In Japanese,
it is called cha-no-yu (茶の湯)
or sadō, chadō (茶道),
while the manner in which it is performed, or the art of its performance, is
called (o)temae. Zen Buddhism

Types of tea ceremony
1. Informal tea
gathering chakai (茶会,
tea gathering)
A
chakai is a relatively simple
course of hospitality that includes confections, thin tea, and perhaps a light
meal.
2. Formal tea
gathering chaji (茶事,
tea event)
A chaji is a much more formal
gathering, usually including a full-course kaiseki meal followed by confections, thick tea, and thin tea. A
chaji can last up to four
hours.
The two special aspects that concern for
matcha are during farming and processing process to get the best quality of
matcha powder. Then, the micron-sized matcha is produced using tea grinders
that only can produce 40 grams per hour for the high-class matcha that will be using
in tea ceremony.
How Matcha is Made
1.
Farming
Once the buds of the tea leaves are
begin to sprout, the entire crop is shaded for about three to four weeks
before harvest. The tea plants keep in the shadow.
This will increase the amount of
chlorophyll in the leaves because the rate of photosynthesis is slow down. This
turns the leaves a darker and vibrant shade of green. Other than that, they
also produce more amino acids especially theanine
and caffeine. Matcha is five
times higher in chlorophyll than in regular green tea thus is the only tea that
we actually ingest the leaf!
2 2. Process
The stems and veins are removed during
processing. After removing the stems and veins of the tea leaves, which
are hand selected, they are steamed briefly to stop fermentation. This process
to ensure only the finest leaves are grounded into matcha. After that the
leaves are dried and kept in cold storage which will deepen the flavour.

De-stemmed and Grinder
After process of de-veined and
de-stemmed the tea processors will now sort them into containers according to
colour, texture, and aroma. Then, will add in hot water to the tencha to grade
the quality of the tea. After grading, the tea will undergo its proper labelling.
Finally, the processors will now store the teas in a refrigerated room where it
can maintain its quality.
In modern times, matcha is used to
many flavour such as mocha, soba noodles, ice-cream, latte, supplement and
variety of confectionary.
